A creative spin on the more well-known Caprese salad, this refreshing salad takes minutes to put together and serves as an elegant starter.
Ingredients:
- FELIX Old-Fashioned Pickled Sliced Beetroot 710g
- 1 ball of fresh mozzarella or burrata cheese
- Fresh dill or parsley
- Chopped pistachios
Instructions:
- Drain FELIX pickled beetroot slices, blot off excess brine on a kitchen paper.
- Cut beetroot slices in half if desired and arrange in a ring on a serving plate.
- Place mozzarella/ burrata ball in the centre of the plate.
- Garnish with chopped dill and parsley and chopped pistachios. Enjoy!
